What are the top 8 allergens?

According to the FDA, the major food allergens, otherwise known as the “top 8”, are milk, eggs, fish, crustacean shellfish, tree nuts, peanuts, wheat and soybeans. These eight foods, and any ingredient that contains protein derived from one or more of them, are designated as “major food allergens” by the Food Allergen Labeling and Consumer Protection Act of 2004 (“FALCPA”).You will often see me refer to the major food allergens as the “top 8” or “n of top 8.”

Are your cakes really dairy free?

Absolutely! All my cakes are made with pea milk, flax milk, or vegan margarine. All sources are non-gmo and free from the top 8 allergens.

And nut free?

Yes! Although almost every bakery uses almond extract in their cakes, I don’t and it doesn’t compromise my final product at all. I do not use any nuts, including coconuts, in any of my baking. I also learned that nutmeg is actually not a nut. It’s a seed! To achieve the “nuttiness” in some recipes, I use pumpkin seed flour.

Is everything soy free and corn free as well?

Yes! I use vegan soy free margarine that is free from the top 8, as well as an organic shortening that is also free from the top 8. The “milks” I use in my recipe are also free from the top 8. Whew! That was repetitive! And the baking powder used is corn free.

What is in your gluten-free flour?

I use a mix brown rice flour, sweet rice flour, white rice flour, potato starch, tapioca starch, sorghum flour, arrowroot starch, guar gum, rice bran, and xanthum gum. The proportions change depending on the recipe.

Can you make a cake with bright pink frosting?

The answer is no. P L U F F  C A K E S does not use any food dyes/colorings in our cakes. Instead, we use freeze dried fruit or vegetable powder, dried/roasted seeds, or vegetable/fruit pastes or jams to “color” or flavor our baked foods. Colors may come out a little more muted than what you’re use to seeing.

Do you use organic ingredients?

P L U F F  C A K E S strives to use all organic and/or local ingredients whenever possible.

Do you have ready-made orders I can pick up today?

The answer is most likely not. P L U F F  C A K E S is currently a home bakery without a storefront. I cannot afford to keep ready-made items on hand. BUT, sometimes I have extra cake left over from a recent order so please ask!

Can you customize a cake for me?

Definitely! All my cakes are custom orders. If you don’t see a type of cake or flavor listed in my menu, just ask me! If you’re celebrating an anniversary or a birthday, let me know as well.

Do you deliver?

I’m a one-woman show so I’d rather my customers pick up their orders at an agreed upon location but I will deliver within Mount Pleasant for a small fee.

Can you ship me a cake?

Sorry, no. But if you’re ever in Charleston, SC, let me know and I’ll be happy to make you a cake.

Why do you require a deposit?

Customers are required to pay a 50% non-refundable deposit by cash, credit card, PayPal or Venmo (the latter two are preferred). This deposit is to guarantee that customers will not cancel their orders last minute after I’ve gathered all the ingredients, prepped the cakes, and/or already baked and assemble the cakes.

Why is there a tax on my baked goods?

Uncle Sam demands a tax from all of us, even home bakers! Starting January 1, 2018, P L U F F  C A K E S will be adding a 5.5% tax to all orders.
